A little review of my meals from last week…
Its nice to be cooking at home again, although the dishes drive me nuts! Its a never ending task when you have a small kitchen. Bulk cooking helps… alot! My attempt at crock-pot beef and veggies turned out ok, but it needs alittle something-something. I’ll need to look up some recommendations. My attempt at Paleo Shrimp Scampi (recipe below) on the other hand turned out great!
I did take some time to look up some Paleo recipes and decided to try the Thai Chicken Soup as my first one. Overall it is very good, however, it does seem to be missing something. You check out the recipe below along with my notes. Next up Paleo Butter Chicken… we’ll see how that goes!
I did eat out a bit this week. Breakfast was from the office cafe since I slept in or out with friends over the weekend, just because I wanted to be social. Either a omelet or scramble with some fruit. Did eat dinner at Una Mas on Sat because I was attending open house for my drum corps (San Francisco Renegades) and it was a fundraiser. I got the steak fajitas, just meat and veggies w/ gauc and tomatoes.
Paleo Scrimp Scampi
- Shrimp (used pre-cooked/frozen)
- Coconut Oil
- Garlic
Saute! Simple, yet delicious!!
Thai Chicken Soup

Ingredients (serves 3-4)
– 1 whole roasted chicken – meat removed and shredded
– 1 L of chicken stock
– 1 and 1/2 cans of coconut milk
– 2 bunches of Kale – stems removed, leaves chopped
– 1 bag of Kelp Noodles – rinsed
– 1 bunch of green onions – chopped
– 1 Cup of chopped cilantro
– 1 Tbsp of minced ginger
– 1/4 tsp of chili flakes
Directions:
- In a large pot, heat stock. Once it reaches a simmer, add coconut milk, ginger, chili flakes and kale.
- Stir around and wait until kale shrinks (about 5-7 minutes).
- Add kelp noodles and chicken. Bring to a simmer and let it go for 7 more minutes.
- Add green onions and cilantro. You could top it with this afterwards, but I just added mine right into the pot.
- You may need to add more stock or coconut milk if there is not enough liquid or you prefer it soup-ier.
- Enjoy!
Notes: We added some red curry powder and lime juice. Also, we used crushed red pepper flakes as I didn’t have any chili flakes.
Review: My friend Carol and I had this Sun night. Overall it is very good, however, it does seem to be missing something. We added the curry and lime by looking up a few other online recipes, which helped… but there was still something missing and neither of us could figure out what.
