I had a meeting for my CalHaunts NorCal group and needed to bring something for a potluck. So I searched around online, decided to try carnitas, and based it off of this Slow Cooker Carnitas from CrossFit Genius. I added a few other spices that I found in some other carnitas recipes and it turned out pretty good. There was lots of leftovers from the potluck, so I’ll be have it for lunch for a few days ;-) I passed on most of the stuff at the potluck except the fresh fruit. I did bring a reserve of fruit, nuts, and a Paleo kit just in case… but wasn’t needed.
Oh, and the pancakes… I finally tried the version 1 and it turned out pretty well. The batter was quite a bit thicker than the other version, however, I still managed to botch the first one. But the 2nd and 3rd pancakes where actually pretty decent.
Unfortunately my attempt at Paleo sorbet, was not so successful… oh well.
