This was not the best of days, as I ate out for lunch and dinner Granted they where stir-fry, they had a bit of salt and  a bit of sauce… especially dinner. We ended up at a Chinese restaurant, and in spite of me talking to the wait about light/little sauce… the dishes came out fairly drenched and I made quite a little mess trying to shake the sauce off onto my plate before eating ;-)

Back to Mongolian BBQ again!! Went out to dinner with some friends and we ended up at New Mongolian BBQ again. Hey, if it works and is tasty… I’m good with that. We then went over to a Gelato place where they had some 100% fruit (no sugar added, I asked) sorbetto, so I got some mango and pomegranate. It was a nice treat.

I had a meeting for my CalHaunts NorCal group and needed to bring something for a potluck. So I searched around online, decided to try carnitas, and based it off of this Slow Cooker Carnitas from CrossFit Genius. I added a few other spices that I found in some other carnitas recipes and it turned out pretty good. There was lots of leftovers from the potluck, so I’ll be have it for lunch for a few days ;-) I passed on most of the stuff at the potluck except the fresh fruit. I did bring a reserve of fruit, nuts, and a Paleo kit just in case… but wasn’t needed.

Oh, and the pancakes… I finally tried the version 1 and it turned out pretty well. The batter was quite a bit thicker than the other version, however, I still managed to botch the first one. But the 2nd and 3rd pancakes where actually pretty decent.

Unfortunately my attempt at Paleo sorbet, was not so successful… oh well.
